Both of them are resistive temperature detectors made of platinum (Pt), which belong to positive temperature coefficient.
1. The resistance at 0 degrees Celsius is different. Pt100 is 100 Euros and Pt1000 is 1000 Euros.
2. PT100 means that its resistance is 100 ohms at 0 C and 138.5 ohms at 100 C.
PT1000 means that its resistance is 1000 ohms at 0 C and 1385 ohms at 100 C.

If the wire is long, the cumulative error of resistance of PT1000 receiving line has little effect, and PT100 needs a compensating wire.
The degree of PT1000 is 10 times higher than that of PT100 (PT1000 1 3.8_, PT100 1 0.38_), so it is less affected by environment.
PT1000 the price is high.
PT1000 is suitable for measuring small range temperature changes (because the temperature changes once, resistance increases or decreases by 3.8 ohms, and the later circuit is easy to detect).
PT100 is suitable for measuring a slightly large range of temperature changes (due to temperature changes of one degree, resistance increases or decreases by 0.38 ohms)
